This recipe is a perennial favorite in K-State’s dining halls. “I love this recipe because it truly represents what Kansas is to me,” said Valerie Tan. She got the recipe from K-State Housing and Dining Services.
Ingredients:
- 1 20-ounce package chocolate sandwich cookies such as Oreos
- 8 ounces cream cheese, softened
- 1/2 cup margarine, softened
- 1 cup powdered sugar
- 3 cups milk
- 1 teaspoon vanilla
- 2 3 ½-ounce packages vanilla instant pudding
- 12 ounces whipped topping
Preparation:
- Crush cookies in a sealable bag. Measure half of the crumbs into a 13×9-inch pan and press into bottom of the pan.
- Using an electric mixer, beat cream cheese until smooth. Set aside.
- In a separate bowl, combine margarine, powdered sugar, milk and vanilla and beat for one minute at medium speed of electric mixer. Fold in pudding mixtures.
- Gently combine pudding mixture with cream cheese. Spread on top of the crumbs, then sprinkle remaining cookie crumbs over the top.
- Refrigerate until firm. Cut into squares to serve.
The dirt can be frozen for an ice cream-like texture. Or it can be assembled in small flower pots and decorated with plastic flowers or gummy worm candy.
Makes 12 servings.
